Healthy Shepherd’s Pie

Ingredients:

Filling
– 3.7 oz lean ground turkey
– 1 Tbl minced onion
– 1 small clove of garlic minced
– 1/4 tsp salt (more or less to taste)
– 1/4 tsp pepper (more or less to taste)
– 1 tsp tomato paste
– 1/4 cup low sodium beef broth
– 1/2 tsp Worcestershire sauce
– 1/2 tsp minced fresh rosemary
– 1/2 tsp minced fresh thyme
– 1/8 cup green beans sliced small (fresh, canned or frozen)

Topping
– 8.5 oz potato sliced, boiled until fork tender
– 2 tsp garlic infused olive oil
– Water if needed

Directions:

1) Preheat oven to 350
2) Sauté turkey meat in medium fry pan until no pink remains.
3) Add rest of filling ingredients and cook down until it is slightly thickened. Set aside.
4) Whip potatoes, oil and water if need with an electric mixer until no lumps remain. Salt and pepper to taste.
5) In a oven safe ramekin or baking dish, add the filling and top with the potato mixture. Place in the oven until potato topping is light brown around the edges.
