Sweet Potato Toast, Done Four Ways

YIELD: 1 serving

COUNTS AS: Alternate #1

Macros Per Serving:

*All amounts are dependent to YOUR meal plan!*

Carb – sweet potato (subbed in for however many carbs your plan indicates) (Example: 30g of bread/oats – 5 oz., cooked = 8 oz., uncooked)

Protein – 1 egg, 4 egg whites (depending on what your plan indicates)

Fat – TBD

Fruit – TBD

Recipe Notes:

To Make Toast –

1) Slice 8oz. uncooked sweet potato into ¼ inch thick slices (number of slices will depend on shape/size of potato)

2) Cook on a baking sheet in 400 degree oven for 13-15 minutes, or until potatoes are tender but not completely cooked

3) To store, let cool completely

To Assemble – put slices in toaster for one round

Option 1: Top with scrambled eggs, salt and pepper – eat fruit and fat on the side or on other piece of toast

Option 2: Top with mashed avocado, squeeze of lime, halved cherry tomatoes, and fresh cilantro – eat eggs and fruit on the side or on other piece of toast

Option 3: Top with almond butter, slices of banana, sprinkle of cocoa – eat eggs on the side or on other piece of toast

Option 4: Top with avocado slices, and an over-easy egg, salt and pepper – eat egg whites and fruit on the side or on other piece of toast
